The new roads to food creativity to be explored in upcoming edition

Held from January 25th – 27th, 2016, “The Post Avant-Garde Language”, will be the underlying theme for the upcoming edition of Madrid Fusión, which will look at the latest culinary trends and “New Roads to Creativity”.

As with previous years, this event will be a two-in-one conference, during which the avant-garde cuisine on display at Madrid Fusión will share the spotlight with the more traditional culinary themes covered during Saborea España.

More than one hundred chefs from fourteen countries will participate in the 2016 edition of this conference, which will include seventy technical demonstrations, eighteen educational workshops, eight competitions, auctions and awards.

The guest country at this year’s Madrid Fusión will be Thailand, and the guest cuisine will be that of Colombia. Additionally, The list of Spanish chefs participating in this event includes a stellar group of some of the best of the best, as well of a roster of acclaimed international names from the culinary world: David Muñoz, Ricard Camarena, Grant Achatz, Daniel Humm, Will Guidara, Virgilio Martínez, Mauro Colagreco, Jorege Vallejo, Ángel León, Joan Roca, Andoni L. Aduriz, Neil Harbisson, Simon Rogan, Leonardo Pereira, José Andrés, Josean Alija, and more.

For its part, Saborea España will discuss themes including “Challenges in the modern restaurant industry” and “Environmental Respect, cooking without a trace, stop food waste”, with the participation of Spanish chefs including Eneko Atxa, Andoni Luis Aduriz, Rodrigo de la Calle, Elena Arzak, Dani García, Mario Sandoval, Sergio and Javier Torres and Susi Díaz.

And, of course, no edition of Madrid Fusión would be complete without wine conference Enofusión and sweets conference Dulce Fusión.
